- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a large bowl, beat the butter and sugars together until light and fluffy. Add in the eggs and vanilla extract, and mix until well combined.
- Gradually add in the flour mixture, mixing until just combined.
- Using a cookie scoop or spoon, form the dough into balls about 1 inch in diameter. Place them on the prepared baking sheet.
- Using your thumb or the back of a spoon, make an indentation in the center of each cookie.
- Bake for 12–15 minutes, or until the edges are firm and the centers are set.
- While the cookies are baking, make the filling. In a double boiler or heat-proof bowl set over a pot of simmering water, melt the chopped chocolate and heavy cream together, stirring frequently. Once melted and smooth, remove from heat and stir in the vanilla extract.
- Once the cookies are done baking, remove them from the oven and let them cool for a few minutes. Spoon about 1 teaspoon of the chocolate filling into each indentation.
