Use this simple recipe for crispy pasta to turn ordinary spaghetti into a tasty, crunchy treat! This recipe goes things a step further by frying cooked pasta until it turns golden, as opposed to serving it soft. After being boiled till al dente, the pasta is mixed with olive oil, garlic, and herbs then baked or pan-fried until it is crispy and has a hint of char. By making the pasta crispy on the exterior and tender on the inside, this technique gives it a lovely texture. As a snack, appetiser, or a fun touch on your classic spaghetti dinner, it's ideal. Add Parmesan cheese as a garnish or dip in marinara for a delicious treat!

Directions

  • Step 1
    Cook the Pasta:
  • Step 2
Bring a large pot of salted water to a boil.
  • Step 3
Add the pasta and cook according to package instructions (usually 8-10 minutes for al dente).
  • Step 4
Drain the pasta and set it aside. Reserve about 1/2 cup of pasta water for later.
  • Step 5
    Prepare the Sauce:
  • Step 6
Heat olive oil or butter in a large skillet over medium heat.
  • Step 7
Add the minced garlic and sauté for 1-2 minutes until fragrant, but be careful not to burn it.
  • Step 8
Pour in the heavy cream (or milk), stirring constantly. Bring to a gentle simmer.

Add Cheese and Season:

Stir in the grated Parmesan cheese and continue to simmer until the sauce thickens (about 2-3 minutes).

Season with salt and black pepper to taste. You can also add red pepper flakes for some heat.

If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

 Combine Pasta and Sauce:

Add the drained pasta to the skillet and toss to coat the pasta in the sauce.

Let it cook together for 1-2 minutes to allow the flavors to meld.

 Serve:

Garnish with freshly chopped parsley or basil and extra Parmesan cheese on top.

Serve hot with your favorite side dishes or bread.

Tips:

You can add grilled chicken, shrimp, or sautéed vegetables to make it a heartier meal.

Use whole wheat pasta for a healthier version.
